Rottnest Bakery is looking for an experienced Bakery Manager to lead the retail side of one of Rottnest Island’s busiest and best-known businesses.

This is a hands-on management role for someone who knows how to run a strong retail operation. You’ll be responsible for the performance of the bakery, leading the front of house and production teams, driving sales and profitability, maintaining exceptional customer service and making sure the bakery presents at its best every day.

We’re looking for someone with strong commercial acumen, genuine leadership capability and passion for customer service. You’ll need to be comfortable making decisions in high pressure situations, setting standards and leading from the front, while creating a positive environment for both the team and our customers.

What you’ll be responsible for

- Leading the day-to-day retail operations of the Rottnest Bakery.
- Taking ownership of sales, gross profit, wages, labour costs, waste and overall commercial performance.
- Leading, engaging and developing a high-performing team.
- Recruiting, onboarding, rostering and managing the team, particularly through the Island’s busy peak periods.
- Setting a high standard for customer service and ensuring the team consistently delivers it.
- Managing product ranging, stock levels, ordering and availability.
- Maintaining strong merchandising, presentation and store standards.
- Identifying opportunities to grow sales, improve margins and strengthen the customer offer.
- Using sales and performance data to make practical commercial decisions.




- Working closely with the Production Manager to align production with customer demand and minimise waste.
- Maintaining high standards across food safety, workplace health and safety and operational compliance.
- Being visible on the floor and prepared to get involved when needed.

What we’re looking for

You’ll be an experienced retail or food operator who enjoys taking ownership and running a business well. Ideally, you will bring:
- Proven management experience in retail, bakery, fresh food, supermarket or hospitality.
- Strong commercial acumen, including experience managing sales, GP, budgets, wages and labour.
- Strong leadership skills and the ability to set clear expectations, motivate people and build a positive team.
- An exceptional customer service mindset.
- A high-energy, positive and practical approach.
- Confidence making decisions and operating in a fast-paced environment.
- Strong organisational skills and the ability to stay across the detail without losing sight of the bigger picture.
- An understanding of stock management, merchandising and waste control.
- Food safety knowledge and experience maintaining high operational standards.
