About the role
Burradoo Park Farm is seeking a highly skilled Cricket and Food Production Assistant to work in our Insect Institute venture. This is a critical, full-time operational role responsible for the end-to-end management of our Acheta domesticus (House Cricket) production cycle. As we transition from startup phase, we require an expert to help work alongside our Farm Operations and Product Manager of our facility, optimise yield predictability, and implement rigorous husbandry standards.
You will be responsible for our operations and ensuring our product meets the high-quality benchmarks required for the Burradoo Park Farm retail channel and beyond.
Key responsibilities
- Manage the full cricket lifecycle, from egg incubation and bin preparation to harvesting and post-harvest processing
- Execute daily procedures, including precise climate control (temperature/humidity), specialised feeding, water supply management, and colony monitoring
- Maintain strict hygiene and biosecurity standards in line with HACCP food safety guidelines. Ensure the facility is audited and ready for regulatory compliance
- Maintain granular production logs, including mortality rates, growth patterns, and yield data, to analyze and improve the Feed Conversion Ratio (FCR) and overall output
- Refine existing Standard Operating Procedures (SOPs).
Identify inefficiencies in the breeding and harvest phases and implement technical improvements to ensure consistent, repeatable yields
- Oversee post-harvest processing, including humane harvesting techniques and preparation for packaging, ensuring the final product meets premium retail standards
About you
- A degree or formal background in Entomology is highly preferred
- Strong technical understanding of insect biology, specifically Acheta domesticus
- Proven experience in commercial insect farming and or controlled-environment agricultural production
- Exceptional attention to detail. You are methodical about record-keeping, SOP adherence, and facility maintenance
- Ability to manage and troubleshoot systems, monitoring alarms, and climate control equipment essential for cricket health
- Experience with or a solid understanding of food safety standards (HACCP or similar) is essential for our regulatory pathway
- Ability to work autonomously, take ownership of production outcomes, and drive the facility toward commercial milestones
