The Role

As an Experienced Sushi Chef, you will be responsible for preparing and presenting sushi, sashimi and other Japanese dishes to the highest standard, maintaining kitchen excellence, and contributing to an innovative, collaborative, and high-performing team. You will uphold traditional techniques while embracing creativity to help evolve our menu.

Key Responsibilities

- Prepare and present sushi, sashimi, and other Japanese dishes with precision and artistry.
- Maintain the highest standards of food quality,



consistency, and presentation.
- Ensure all kitchen hygiene, food safety, and OH&S; standards are met.
- Assist in menu development and introduce seasonal, innovative dishes.
- Support and mentor junior kitchen staff.
- Assist with stock control, ordering, and supplier coordination.

About You To be successful in this role, you will need:

- Proven experience as a Sushi Chef in a Japanese restaurant.
- Exceptional knife skills
- Expertise in sushi-making techniques.
- Strong attention to detail and a commitment to quality.
- Knowledge of food safety and hygiene regulations.
- Ability to work efficiently in a fast-paced environment.
- A collaborative, positive, and team-focused attitude.
- Flexibility to work evenings, weekends, and public holidays as required.
