Our client is an established luxury hospitality operator with a highly regarded boutique property on the Mornington Peninsula. Set within an impressive regional estate, the property combines premium accommodation with destination dining, weddings, corporate retreats and private events. Food, wine and genuine hospitality sit at the centre of the guest experience, making this an excellent prospect for an experienced operator looking to lead within a sophisticated yet welcoming environment.

As Food and Beverage Manager, you will take ownership of the property’s front-of-house food and beverage operation, working closely with the culinary, events and hotel leadership teams to deliver consistently high standards across restaurant service, functions and guest experiences. The role requires an operational leader who is equally comfortable on the floor, developing people and managing the commercial performance of the department.

Key responsibilities will include

- Lead, mentor and develop the food and beverage team, creating a strong culture of service, accountability and engagement
- Oversee daily restaurant, beverage and function operations, ensuring consistent service standards across all outlets and events
- Work collaboratively with kitchen, events and hotel teams to deliver seamless weddings, corporate functions and private celebrations
- Manage rostering, labour, stock, beverage controls, costs and other key departmental performance measures
- Maintain a strong presence within the operation while continually improving systems, training and the overall guest experience

Candidate Profile





You will be an experienced food and beverage leader with a strong understanding of premium restaurant and hotel operations. You will bring polished service standards, commercial awareness and the ability to build capable, engaged teams. Experience across events or destination hospitality will be particularly valuable given the varied nature of the operation. The successful candidate will demonstrate:
- Proven leadership experience as a Food and Beverage Manager, Restaurant Manager or senior hospitality operator in a quality environment
- Strong knowledge of premium restaurant service, wine and beverage operations
- Experience managing functions, weddings or conference food and beverage delivery
- Sound commercial capability across labour management, stock control, rostering and departmental performance
- A hands-on, professional leadership style with excellent communication and guest engagement skills
