About Us
Kent Town Hotel is part of the Tilley & Wills Hospitality Group, a multi-venue hospitality operator with a growing footprint across Australia. As our flagship SA venues, Kent Town is rapid-paced, high-volume, and known for its food, service, and events offering. We're looking for an Operations Manager to join the leadership team and keep the engine room running.
About the Role
Reporting directly to the General Manager, the Operations Manager is responsible for everything that happens behind the scenes to keep the venue running smoothly. You'll be the backbone of the operation — owning rostering, reporting, systems, and the day-to-day mechanics that let the front-of-house team focus on delivering a great guest experience.
This is also very much a hands‑on, service‑based role — you won't be confined to the back office. You'll be visible on the floor during trade, jumping in wherever needed to support the team and ensure service runs smoothly, so this suits someone who thrives on structure and process but is just as comfortable rolling up their sleeves during a busy service.
Key Responsibilities
Build and manage weekly staff rosters across all departments, balancing labour cost against trade and service needs
Prepare and deliver regular operational and performance reporting to the General Manager and Head Office
Oversee day‑to‑day administrative and back‑of‑house systems, including rostering/time‑and‑attendance platforms, stock and ordering systems, and compliance record‑keeping
Support recruitment, onboarding,
and scheduling coordination across teams
Monitor wage costs, hours, and rostering compliance against relevant Award and enterprise agreement obligations
Liaise with suppliers and manage ordering, stock control, and inventory processes
Ensure venue compliance across WHS, food safety, and licensing requirements
Work closely with the General Manager and department heads to identify and resolve operational bottlenecks
Be present and hands‑on across the floor during service, supporting the team and stepping in wherever needed to keep trade running smoothly
About You
Previous experience in an Operations Manager, Assistant Venue Manager, or similar back‑of‑house leadership role within hospitality
Strong working knowledge of rostering and time‑and‑attendance systems (e.g. Tanda, Deputy, or similar)
Confident with reporting, spreadsheets, and data‑driven decision‑making
Highly organised, with the ability to juggle multiple priorities in a fast‑paced environment
A solid understanding of the Hospitality Industry General Award (HIGA) and rostering compliance
A proactive, solutions‑focused approach and strong communication skills
Experience working closely with a General Manager or senior leadership team
Comfortable being hands‑on and visible on the floor during service, not just behind a desk
