Lucas Collective in Melbourne's CBD is launching Noẽma, a recent Mediterranean dining concept, and seeks an Assistant Head Sommelier to lead the wine program from day one. You will oversee wine service, cellar operations, and guest experiences, ensuring high standards across venues, private dining spaces, and events.
