Purpose
Flaminia, the newly opened Italian seafood restaurant by award-winning Chef Giovanni Pilu at Pullman Quay Grand Sydney Harbour, seeks talented Sommeliers with proven restaurant experience to enhance our recently opened team at Pullman Quay Grand Sydney Harbour.
High-volume high-end dining calls for exceptional wine expertise to elevate guest experiences and drive beverage sales.
Primary Responsibilities
Greet guests, present menus, offer personalised recommendations on our Italian-focused wine list and seafood specials, and handle orders with attention to dietary needs.
Curate wine pairings from our Italian-focused list, guide guests on selections, and execute flawless pours and service during peak shifts.
Collaborate with floor teams on upselling, manage cellar inventory/stock control, conduct staff trainings,



and handle beverage-related guest queries or issues.
Provide polished table service, including wine pours, dish presentation, and proactive check-backs in a high-end dining workplace.
Maintain venue standards during peak service, support team coordination, and ensure seamless guest experiences.
Skills and Experience
Minimum 2 years in upscale restaurants, with proven wine knowledge and upsell skills.
An understanding of Italian wines and regions essential
Excellent interpersonal skills, ability to thrive in fast-paced settings, and availability for evenings, weekends, and events
RSA certificate, and alignment with Accor Heartist values
