We are seeking an experienced and passionate Sous Chef to support our Executive Chef in leading a high-performing kitchen team and delivering exceptional food experiences for our guests. About the Role

Reporting directly to the Executive Chef, you will play a key role in the day-to-day management of our catering and kitchen operations. You will help ensure the highest standards of food quality, safety, presentation, and service while contributing to the ongoing success of a busy event-driven venue.

This position requires a hands-on leader who can confidently oversee kitchen operations and assume responsibility for the kitchen in the Executive Chef's absence.

Key Responsibilities

- Support the Executive Chef in all aspects of kitchen management.
- Supervise, coach and develop kitchen team members.
- Assist with menu planning, food preparation and service delivery.
- Manage stock control, stock rotation, ordering and inventory management.
- Complete stocktakes and monitor food costs and wastage.
- Maintain quality assurance processes and food safety standards.
- Assist with rostering and workforce planning.
- Ensure kitchen, storage and preparation areas are maintained to the highest standards of cleanliness and hygiene.
- Support the implementation and use of stock management and recipe costing systems.
- Foster a positive, collaborative and high-performing kitchen culture.

About You

To be successful in this role, you will bring:

- Previous experience as a Sous Chef or senior kitchen leader.
- Strong leadership and team development skills.




- Experience in high-volume catering, hospitality or event environments.
- Excellent food safety and hygiene knowledge.
- Sound understanding of stock control, inventory management and food cost control.
- The ability to work under pressure while maintaining exceptional quality standards.
- Strong organisational and communication skills.
- A proactive and positive attitude with a commitment to delivering outstanding customer experiences.

Essential Qualifications & Licences:

- Cert III in Commercial Cookery
- Food Safety Supervisor Certificate
- Responsible Service of Alcohol
- Forklift Licence (Preferred)

ABOUT THE VENUE

Built by the Brisbane City Council as a world class multipurpose facility, the Brisbane Entertainment Centre formed part of Brisbane's bid for the 1992 Olympic Games. The Centre has been operated since its inception by Legends Global (formerly ASM Global and AEG Ogden Brisbane Pty Ltd). Ownership was transferred to Stadiums Queensland (formerly Major Sports Facilities Authority) from 1 July 2002.





The Brisbane Entertainment Centre has hosted a diverse range of events including Monster Trucks, Supercross, Circuses, Bull Riding, Concerts, Conventions, School Speech Nights, Ice Spectaculars, Wrestling and Boxing.

Primarily recognised as a venue to host concerts, family shows and sporting events, the Brisbane Entertainment Centre also specialises in staging corporate events in particular conferences, seminars, product launches and gala banquets.
