We currently have a Full-time role available for an experienced Chef to join the Spotless team located at Brisbane Immigration Detention Centre, Pinkenba, QLD. Spotless, as a subcontractor to Secure Journeys, will be responsible for preparing and serving culturally diverse, nutritious meals contributing to the overall health and well-being of those in the centres.

What you'll do
n
n
- Assemble, prepare, and produce food requirements as directed by the Catering Manager. This includes food safety, maintaining cleanliness in the kitchen, managing stock control, and adhering to all kitchen policies and procedures.
n
- Ensure compliance with the HACCP Food Safety Plan, monitoring food safety standards and practices, maintaining hygiene in food preparation areas, and completing all Food Safety Documentation accurately and timely.
n
- Monitor and enforce food storage standards, ensuring proper handling and rotation of stock using First In, First Out (FIFO) principles, and maintaining appropriate holding temperatures for perishable items.
n
- Ensure compliance with our Standards of Business Conduct and contribute to a culture of safety and quality improvement.

What you'll bring
n
n
- Certificate III or higher in Commercial Cookery and Food Safety Supervisor Certificate
n
- Current Working with Children Check (Employee) - Mandatory or willing to apply
n
- Knowledge of menu and nutritional standards
n
- Full understanding of HACCP Food Safety guidelines
n
- Exemplary bulk cooking skills (ideal Aged Care or Resources experience)
n
- Solid written and verbal communication abilities
n
- Excellent teamwork and interpersonal skills.
n
n
