Tora at Bowral Restaurant is a Japanese restaurant located in Bowral in the Southern

Highlands. We are seeking an experienced and reliable Cook to join our kitchen team

on a full time basis.

The successful applicant will be responsible for preparing and cooking a range of

Japanese-style dishes, including ramen, noodle dishes, rice dishes, meat and vegetable

dishes, fried items and other menu items.

Key duties and responsibilities include:

 Preparing and cooking meals in accordance with established recipes and menu

requirements.

 Preparing ingredients, sauces, stocks, broths, meats and vegetables for daily

service.

 Cooking and assembling ramen, noodle dishes, rice dishes and other menu

items.

 Operating commercial kitchen equipment including stoves, grills and fryers.

 Checking the quality and freshness of ingredients before preparation and

cooking.

 Portioning and presenting meals consistently to the restaurant's required

standards.

 Monitoring food storage, stock rotation and ingredient requirements.

 Maintaining food safety,



hygiene and cleanliness standards throughout the

kitchen.

 Assisting with food preparation for lunch and dinner services.

 Working effectively with other kitchen and front-of-house staff during busy service

periods.

Skills and experience

Applicants should have:

 AQF Certificate III in Commercial Cookery with relevant on-the-job training, AQF

Certificate IV in Commercial Cookery, or an equivalent qualification; or

 at least three years of relevant commercial cooking experience in lieu of formal

qualifications;

 practical experience working in a commercial restaurant kitchen;

 sound knowledge of food preparation, cooking techniques and food safety

requirements;

 the ability to work efficiently and consistently during busy service periods;

 positive organisational and time-management skills; and

 the ability to work effectively as part of a team.

Applicants must be available to work a rotating roster, including evenings, weekends

and public holidays as required.
