Full-Time Chef — permanent, full-time position based on-site in Prahran, Victoria T/a Nam An Kitchen

Duties

•Prepare and cook authentic Vietnamese dishes to a consistently high standard, following established recipes and presentation standards

•Plan menus and develop new dishes in line with the restaurant's cuisine and seasonal ingredients

•Manage day-to-day kitchen operations, including food preparation, cooking, and plating during service

•Maintain food safety, hygiene, and cleanliness standards in line with Victorian food safety regulations

•Order and manage stock, control portion sizes, and minimise wastage to manage food costs

•Supervise, train, and coordinate kitchen team members, including apprentices and junior cooks

•Monitor kitchen equipment and ensure proper maintenance and safe operation

•Work collaboratively with front-of-house staff to ensure smooth, efficient service

Experience & Qualifications Required

•Trade qualification as a Chef (Certificate III/IV in Commercial Cookery) or equivalent industry experience

•Proven experience as a Chef, with strong knowledge of Vietnamese cooking techniques, ingredients, and flavours

•Ability to work efficiently and stay calm under pressure in a fast-paced kitchen

•Sound knowledge of food safety and hygiene practices, including current food safety certification

•Strong leadership and communication skills, with experience supervising kitchen staff

•Reliable, punctual, and a solid team player

•Availability to work evenings and weekends as required by the roster

•Minimum one-year work experience
