Hours 38 hours per week on average, plus additional overtime where required. The stores trade seven days a week, 11am – 8pm. Weekend availability is essential.

Location S’WICH Bondi Beach and S’WICH Surry Hills, NSW

Salary range $80,000 – $85,000 per annum (full-time)

About the position

The Cook prepares, seasons and cooks food in a dining or catering establishment. The position is responsible for the preparation, cooking, quality and presentation of all menu options, for the safe handling and storage of all foodstuffs, and for ensuring that S’WICH recipes and standards are adhered to at every service.

S’WICH is a contemporary sandwich and salad brand with stores in Bondi Beach and Surry Hills, providing the best quality ingredients in a fast-casual setting.

This is a full-time, ongoing position. It is not a casual, part time or fixed-term position.

Core tasks of the position

- Examining foodstuffs to ensure quality.
- Regulating temperatures of ovens, grills and other cooking equipment.
- Preparing and cooking food.
- Seasoning food during cooking.
- Portioning food, placing it on plates, and adding gravies, sauces and garnishes.
- Brining and preparing vegetables for pickling
- Mixing and measuring sauces and dressings
- Storing food in temperature controlled facilities.
- Preparing food to meet special dietary requirements.
- May plan menus and estimate food requirements.
- May train other kitchen staff and apprentices.
- Prepares, seasons and cooks food in a dining or catering establishment.

Duties and responsibilities

In carrying out the core tasks above, the Cook is responsible for:





- Preparing and cooking food across the full menu, to order and in accordance with S’WICH recipes.
- Examining foodstuffs to ensure quality, and rejecting any produce or stock that does not meet the required standard.
- Seasoning food during cooking, applying the correct seasoning and spicing to each menu option so that quality and taste remain consistent.
- Regulating temperatures of ovens, grills, fryers and other cooking equipment, and ensuring all food is cooked at the correct temperature for the correct time.
- Portioning food, placing it on plates, and adding sauces, side dishes and garnishes to presentation standard.
- Preparing food to meet special dietary requirements, including maintaining a working knowledge of the ingredients in all menu options so that customers with allergies and dietary requirements are properly catered for.
- Storing food in temperature controlled facilities, and monitoring the temperature of the cool room and fridges to ensure raw and fresh foods are correctly stored.
- Completing daily morning preparation of all ingredients required for the menu, and setting up the store for service.
- Assisting with stock control, inventory and daily ordering, and liaising with produce and consumable suppliers.
- Maintaining the cleanliness of the kitchen and serving area, and complying with all food safety,



hygiene and workplace health and safety requirements.
- Planning menus and estimating food requirements, including selecting produce and ingredients, determining the method of cooking, taste testing, and assisting with quantities for costing purposes.
- Training other kitchen staff and apprentices, from initial induction through to ongoing development, and providing day to day direction to staff on shift.

Skills and experience

Essential

- Demonstrated experience in commercial food preparation and cooking, with the ability to work accurately at speed during peak service.
- Sound knowledge of food safety, hygienic handling and temperature control.
- The ability to prepare, season and cook all menu options to recipe, and to portion, plate and present meals consistently.
- Attention to detail and a commitment to quality ingredients.
- Effective communication skills and the ability to work as part of a small team on shift.
- Availability to work weekends, consistent with a business trading seven days a week.

Desirable

- A relevant commercial cookery qualification.
- Experience training or supervising kitchen staff and apprentices.
- Experience contributing to menu development, costing and supplier liaison.
