About the role

As the Bakery Manager/Head Baker at Tommy Collins Group, you will be responsible for overseeing all aspects of the bakery operations at our Elsternwick location. This is a full time, on-site role where you will play a key part in ensuring the efficient and profitable running of our busy bakery production. You will have the opportunity to work closely with our talented team of bakers and viennoiserie & pastry chefs to deliver high-quality, artisan sourdough and viennoiserie products to our customers.

What you'll be doing

- Manage all day-to-day bakery operations, including production, inventory, staffing, logistics and compliance
n
- Lead, coach and develop a team of skilled bakers and pastry chefs
n
- Ensure consistent, high-quality baked goods are produced in line with company recipes and standards
n
- Monitor and control bakery costs, ensuring productivity and profitability targets are met
n
- Liaise with suppliers to order ingredients and equipment in a timely manner
n
- Implement and maintain food safety and hygiene procedures
n
- Contribute to the ongoing development of seasonal new products and recipes
n

What we're looking for

- Proven experience as a Bakery Manager or in a senior baking/production role
n




- Strong knowledge of baking techniques, recipes and food safety regulations
n
- Excellent leadership and people management skills
n
- Ability to work well under pressure and meet deadlines
n
- Strong numeracy and financial management skills
n
- Passion for delivering high-quality baked goods
n
- Relevant qualifications in Baking, Patisserie or a related field
n
