About Us 4. Stones Pty Ltd, trading as Hyderabad House – Indian Cuisine & Authentic Biryani, is expanding its operations with a recent Melbourne branch opening soon.
We are seeking experienced and talented Chefs to join our team and play an important role in establishing and maintaining high standards of food preparation, kitchen operations, food safety and service at our new Melbourne location. The Chef will be responsible for planning, preparing, cooking and presenting a wide range of authentic Indian and Hyderabadi dishes, including traditional and specialty biryanis. The successful candidate must possess strong culinary skills, sound knowledge of commercial kitchen operations and a commitment to maintaining consistently high standards of food quality, hygiene and presentation. Key Duties and Responsibilities
- Plan, prepare and cook authentic Indian and Hyderabadi cuisine.
- Prepare traditional and specialty biryanis and other Indian dishes.
- Organise food preparation and cooking activities according to service requirements.
- Monitor the taste, freshness, quality and presentation of dishes throughout preparation and service.
- Follow established recipes and maintain consistency in flavour, portion size and presentation.
- Develop and test new recipes and menu items when required.
- Plan and prioritise menus, recipes and daily kitchen duties.
- Estimate food and ingredient requirements and assist with ordering supplies.
- Receive, inspect, store and rotate stock according to food-safety standards.
- Maintain effective stock and inventory controls.
- Minimise food wastage and spoilage.
- Prepare food that meets special dietary requirements when required.
- Safely and efficiently operate specialised commercial kitchen equipment.
- Ensure kitchen equipment is properly cleaned, maintained and stored.
- Maintain high standards of personal hygiene, sanitation and kitchen cleanliness.
- Comply with food-safety, workplace health and safety, and sanitation requirements.
- Complete food preparation and cooking tasks within required service timeframes.
- Communicate effectively with kitchen and front-of-house staff.
- Work cooperatively with other members of the kitchen team.
- Provide clear instructions to kitchen staff within the area of responsibility.
- Assist with training and supervising kitchen staff when required.
- Prepare, present, replenish and clear buffet food when required.
- Respond effectively to food shortages, preparation errors and quality concerns.
- Report incidents, equipment problems and operational issues to management.
- Evaluate ingredients and completed dishes to ensure quality standards are maintained.
- Contribute to smooth and efficient kitchen operations during busy service periods.
Skills and Experience Applicants must have:
- At least a Diploma-level qualification in Commercial Cookery or a relevant field.
- At least two years of relevant experience in a similar Chef position.
- Experience preparing biryani and other Indian specialty dishes.
- Strong knowledge of food preparation and a broad range of cooking methods.
- Knowledge of stock control, ordering, food storage and commercial kitchen operations.
- A strong understanding of food safety, hygiene and sanitation requirements.
- Excellent organisational and time-management skills.
- The ability to work efficiently under pressure in a busy commercial kitchen.
- Good communication and teamwork skills.
- A commitment to maintaining high standards of food quality, consistency and presentation.
Experience in authentic Indian or Hyderabadi cuisine will be highly regarded. What We Offer
