Greenbanks is growing, and we’re looking for someone to grow with us.
We're a growing Tasmanian whisky producer making spirit for our own brand and contract customers, and we're looking for an Operations Manager to join us as we move into the next stage of growth.
This is a great chance for someone who wants more than just a production role. You'll take real ownership of the day-to-day distillery operation, from raw materials through milling, mashing, fermentation and distillation to new make spirit, while also helping shape how we operate as we grow.
We're a small team, so the role is broad and genuinely hands‑on. You'll be running plant, solving problems, improving processes, working on equipment and maintenance, and getting involved across the wider distillery when needed. There's plenty happening and plenty still to build.

The role
Reporting to the Distillery Manager, you'll:
- Plan and run daily and weekly production, including raw materials and production requirements.
- Operate and oversee milling, mashing, fermentation and distillation.
- Monitor and manage spirit quality, fermentation, yield, efficiency and process performance.
- Troubleshoot plant and process issues and coordinate routine and preventative maintenance.
- Maintain accurate production records, standard operating procedures (SOPs) and safe work procedures (SWPs).
- Take ownership of production performance, including throughput, yields and conversions, energy use and other key production costs.
- Use production data and what you're seeing on the floor to drive practical improvements in safety, quality, reliability, efficiency and cost.
- Support equipment upgrades, maintenance projects and production R&D.;
- Work closely with the Cask & Maturation Manager to coordinate new make handover and cask filling requirements.
- Pitch in across cask work, warehouse, receivals, dispatch, cleaning and general site jobs when needed.
- Help recruit, train and develop additional production staff as the business grows.
About you
Distilling or brewing experience would be great, but we’re really looking for a positive production all‑rounder: someone practical, mechanically minded, comfortable around plant and equipment, and happy to get stuck in.
We’re looking for someone who:
- Is naturally curious and likes understanding how and why things work.
- Looks for practical ways to improve processes, performance and the way we work.
- Can balance being hands‑on with planning ahead and keeping things organised.
- Takes safety, quality, cleanliness and housekeeping seriously.
- Uses data and observations to make good decisions.
- Takes ownership and follows things through.
- Is comfortable with production systems and Microsoft Office.
- Brings a positive, team‑first attitude and contributes to a good team culture.
- Is flexible and happy to help across the wider operation when needed.
Leadership experience is helpful, but not essential. We’d also be keen to hear from a strong senior operator, distiller, brewer or production all‑rounder who’s ready to take the next step.
