Therestaurant specialises in premium steak selections, curated wines, cocktails and full table servicedining.In light of our continued growth within the industry, we are currently seeking an experiencedSommelier to join us to help support business growth and several upcoming large-scale events,and to be responsible for the curation of our wine and other alcoholic beverage matching with ourfood menu items.Key ResponsibilitiesRecommend dishes and beverages to complement food.Curate wine list and other alcoholic beverage list (including seasonal cocktails), ensuring high standards are met.Supervise and train front of house staff (and, where appropriate, kitchen staff and Chefs) on pairing wines and other alcoholic beverages with menu items.Make and serve beverages (including cocktails).
Coordinate reservations,



table allocations and ensure smooth service delivery and flow.Open bottles, present and decant wines as necessary.Remove empty bottles and used glasses from tables.Maintain records of stock levels and assist with restocking liquors, and wines in the cellar.Ensure the restaurant and bar comply with health and safety regulations.Work closely with chefs and kitchen staff to ensure productive operations and high service standards.Work with suppliers to arrange procurement of specific beverages (particularly wine), adhering to trends and new products.Qualifications/Experience:AFQ Certificate III or Certificate IV (relevant experience can substitute for the formal qualifications depending on the candidate)At least 2 to 3 years of industry experienceProven history of working in fine dining establishments and knowledge of wines highlyDedication to working in a safe and effective mannerJob Type: Full-time.
