The Grand Hotel Millicent is looking for an experienced, motivated and hands-on Head Chef to take ownership of our kitchen and lead the food operation at one of Millicent's well-known local hotels.
This is a great opportunity for a chef who enjoys running their own kitchen, building a strong team and delivering consistently good pub food in a busy regional venue.

About the Role
As Head Chef, you will be responsible for the day-to-day operation of the kitchen and will work closely with venue management to continue developing the food offering at the Grand Hotel.
Your responsibilities will include:
Leading, training and developing the kitchen team
Maintaining consistent food quality, presentation and portion control
Managing kitchen rosters and labour costs
Ordering, stock control and reducing unnecessary wastage
Maintaining appropriate food and wage costs
Ensuring strong preparation and service standards
Maintaining food safety, hygiene and cleaning standards
Assisting with menu development, specials and seasonal offerings
Ensuring recipes, yields and portion sizes are followed consistently
Working closely with the Venue Manager and management team
Creating a positive, organised and professional kitchen workplace




Taking ownership of the overall performance of the kitchen
About You
We are looking for someone who:
Has previous experience as a Head Chef, Sous Chef or senior kitchen leader
Is confident running a busy pub or hospitality kitchen
Is organised, reliable and able to lead from the front
Has strong food safety and kitchen management knowledge
Understands food cost, labour management, stock control and wastage
Takes pride in consistency and presentation
Can train and develop junior chefs and kitchen staff
Remains calm and organised during busy services
Is willing to be hands-on and work alongside the team
Wants to become part of a regional community and build a successful food operation
Experience within pubs, hotels, clubs or high-volume casual dining venues will be highly regarded.
