About the role

At Luna Bakery, our pastry kitchen is where many of our products begin. From croissants and morning buns to cinnamon buns and seasonal pastries, everything is made with care and attention to detail. This is a hands-on production role for someone who can confidently step into lamination and viennoiserie production from the outset, while also being happy to work across the broader pastry and bakery operation wherever the team needs them. You will work closely with the Head Pastry Chef to produce high-quality pastries, viennoiserie and baked products while maintaining excellent standards of consistency, presentation and food safety.

Key responsibilities

- Laminating and producing croissants, morning buns and other viennoiserie
- Mixing and preparing laminated and enriched doughs from scratch
- Confident and efficient use of a dough sheeter
- Mixing, shaping, fermenting, proofing, baking and finishing products
- Preparing fillings, components and other pastry products
- Maintaining high standards of quality and consistency
- Organising and maintaining the pastry section
- Supporting and training junior pastry team members
- Assisting with stock control and ordering
- Following food safety and hygiene procedures

About you





- Minimum 1 year of commercial experience in viennoiserie preparation
- Solid hands-on experience producing laminated pastry and viennoiserie
- Confidence to step into lamination and croissant production from the outset
- Experience using a dough sheeter
- A solid understanding of dough handling, fermentation and proofing
- Strong technical pastry skills
- Excellent attention to detail and pride in producing consistently high-quality products
- A positive, reliable and team-focused approach
- Ability to work independently as well as part of a team
- Good communication and organisational skills
