About the role

Lead all kitchen operations and service periods. Develop and maintain innovative seasonal menus that reflect the 1915 brand and dining experience. Ensure all dishes are prepared and presented to consistently high standards. Drive creativity through menu development, specials, and event offerings. 1915 is part of Hamo Hospitality, an exciting hospitality company with 5 venues in Geelong featuring; Mexicam's, Woolstore, The Retreat and Paddock Bakery.

Key responsibilities
Lead all kitchen operations and service periods
Develop and maintain innovative seasonal menus that reflect the 1915 brand and dining experience
Ensure all dishes are prepared and presented to consistently high standards
Drive creativity through menu development, specials, and event offerings
Recruit, train, mentor, and develop kitchen staff
Create a positive, professional, high-performance kitchen culture
Manage staff rosters to meet operational requirements and labour budgets
Maintain exceptional food quality, taste, and presentation standards
Ensure compliance with all food safety regulations and health standards




Manage kitchen food costs and labour costs within budget targets

About you
Minimum 2 years of similar experience
Must be hands on and lead from the front.
Managerial Courage
Maintain HACCP and food handling procedures
Conduct stock control, ordering, and inventory management
Build and maintain relationships with local suppliers and producers
Source high-quality ingredients at competitive pricing
Design menus and oversee food execution for weddings, corporate functions, and special events
Coordinate with front-of-house and event teams to deliver seamless guest experiences
