Sous Chef – Full-Time Acqua e Sale | Perth, WA Salary: $79,423 + 12% Superannuation

Full-Time | 40 hours per week FABIO CONCAS t/a Acqua e Sale, an authentic Italian restaurant in Perth, is seeking an experienced and passionate Sous Chef to join our kitchen team on a full-time basis. The successful candidate will work closely with the Head Chef and play an key role in maintaining the quality, consistency and authenticity of our Italian cuisine.

Key Responsibilities Assist the Head Chef with the day-to-day operation of the kitchen. Prepare, cook and present high-quality Italian dishes in accordance with restaurant standards.

Supervise and coordinate kitchen staff during service. Assist with menu planning and the development of seasonal dishes. Monitor food quality, portion control and presentation.

Manage food preparation and ensure productive workflow during busy services. Assist with ordering, stock control and inventory management. Monitor food costs and minimise wastage.

Train and supervise junior kitchen staff. Ensure compliance with food safety, hygiene and WHS requirements.



Maintain a clean, organised and professional kitchen setting.

Step into the Head Chef's responsibilities when required. Skills & Experience The successful candidate will ideally have:

Relevant commercial cookery qualifications or equivalent experience. Demonstrated experience working as a Chef/Sous Chef in a busy commercial kitchen. Strong knowledge of Italian cuisine, ingredients and traditional cooking techniques.

Experience supervising and coordinating kitchen staff. Strong organisational and time-management skills. Ability to work effectively under pressure.

High standards of food quality, presentation and hygiene. A genuine passion for Italian food and hospitality. Position Details
