RACV Cape Schanck Resort is seeking a passionate and experienced Pastry Chef de Partie to join our culinary team on a permanent part time basis.

Reporting to the Chef de Cuisine, you'll play a key role in producing high-quality pastries, desserts and baked goods across our restaurants, events and conferencing operations, while enjoying one of Victoria's most spectacular coastal locations.

About the Opportunity

As a Pastry Chef de Partie, you'll support the day-to-day operation of the pastry section and help deliver exceptional dining experiences for our members and guests.

In this role, you will:

- Prepare and present high-quality desserts, plated desserts, pastries, cakes, baked goods, and buffet offerings across multiple food outlets.

- Support the daily operation of the Pastry Kitchen, ensuring efficient service delivery across breakfast, lunch, dinner, conferencing, and event periods.

- Complete all mise en place requirements and maintain service readiness for restaurant, conference, banquet, and event operations.

- Produce pastries, cakes, desserts, and baked products to a consistently high standard, following approved recipes and presentation guidelines.

- Prepare, finish, and present pastry and dessert items with exceptional attention to quality, creativity, and presentation.

- Create and prepare customized VIP guest amenities and special occasion desserts.

- Assist with pastry production requirements for conferences, weddings, functions, and other special events.

- Support effective stock management practices, including ordering, stock rotation, inventory control, and waste minimization.





- Assist in the training, mentoring, and development of apprentices, cooks, and junior chefs.

- Maintain and uphold the highest standards of food safety, hygiene, sanitation, and workplace health and safety.

- Work collaboratively with the broader Kitchen Brigade and Food & Beverage team to deliver exceptional guest experiences.

- Contribute positively to team culture, operational excellence, and continuous improvement initiatives within the kitchen.

What you’ll need to be successful

You're a qualified pastry chef who takes pride in producing quality desserts and enjoys working in a fast-paced hospitality environment.

You'll bring:

- Certificate III in Patisserie or completion of a pastry apprenticeship

- Previous experience in a pastry kitchen within a hotel, resort, bakery, patisserie or hospitality venue

- Experience producing pastries, cakes and desserts in a commercial kitchen environment

- Experience finishing cakes and desserts and preparing plated desserts to a consistent standard

- Good knowledge of pastry techniques, baking methods and dessert presentation

- A sound understanding of food safety, hygiene and stock control practices

- The ability to remain calm under pressure and work effectively as part of a team

- A positive attitude, solid work ethic and willingness to learn

- Flexibility to work a rotating roster, including weekends, public holidays and peak trading periods
