About the Position
Denmark Hill Kafe is seeking an experienced, full-time Chef to take charge of day-to-day food preparation and kitchen operations. Reporting to the business owners, the Chef will plan and prepare menu items, maintain the quality and presentation standards guests expect, oversee food safety and hygiene practices, manage stock and supplies, and coordinate the work of kitchen staff during service. This is a hands-on role that is central to the restaurant's reputation, and the successful applicant will play a key part in menu development and in ensuring the kitchen runs efficiently, safely and to a consistently high standard.
Key Responsibilities
1. Plan and prepare a diverse range of dishes in line with the restaurant's menu and quality standards
2. Develop and modify menus, recipes and specials in consultation with the owners
3. Prepare, season and cook food using a range of cooking methods,
and ensure correct portioning and presentation
4. Monitor the quality of dishes at all stages of preparation and presentation
5. Discuss food preparation issues with the owners, dietitians and kitchen and waiting staff
6. Demand and enforce hygiene, food safety and workplace health and safety standards throughout the kitchen
7. Order, receive and store food and supplies; control stock levels and minimise waste
8. Estimate food and labour costs and assist in controlling kitchen expenditure
9. Supervise, instruct and coordinate kitchen staff and assist with rostering during service periods
10. Ensure kitchen equipment is used correctly, cleaned and maintained
11. Freeze and preserve foods appropriately and manage storage rotation
Requirements
1. Australian citizens and permanent residents are encouraged to apply.
2. Certificate III and Certificate IV in Commercial Cookery, or equivalent
3. A minimum of one year of experience as a Chef in a commercial kitchen
4. Sound knowledge of a range of cooking techniques, food preparation methods and menu planning
5. Strong understanding of food safety, hygiene and allergen management practices
6. Ability to work efficiently under pressure during busy service periods and to manage multiple orders accurately
7. Robust organisational skills, including stock control and cost awareness
8. Excellent communication and teamwork skills, with the ability to lead and support kitchen staff
9. Reliability, flexibility and availability to work a rotating roster including weekends and public holidays
