About the role

This is a senior butcher position in a busy butchery and biltong shop. The role involves breaking down and cutting the full range of primals through to display cuts, labelling, packing and working the scales accurately, reading the cabinets and counter to identify restocking needs, managing stock properly including ordering, rotation, waste and stock takes, and holding the shop together during its busiest periods. You will work alongside the owners and take on more responsibility as you prove yourself.

Key responsibilities

- Breaking down and cutting the full range, primals through to display cuts

- Labelling, packing and working the scales accurately

- Reading the cabinets and the counter, and knowing what needs restocking before anyone tells you

- Managing stock properly: ordering, rotation, waste, taking stock

- Holding the shop together when it is at its busiest

- Working alongside the owners and taking on more as you prove yourself

About you

- At least five years as a butcher

- Real inventory and stock management experience, not just helping with orders

- Extremely switched on, thinking a step ahead and dealing with problems without being asked twice

- Willing to learn the shop's way of doing things and bring better ways





- Current driver's licence and a food safety certificate

- Full working rights in Australia

- HACCP training is a genuine advantage

About us

Dry Age Biltong is a butchery and biltong shop on Whitfords Avenue in Woodvale. Our family has been butchering since 1991, first in South Africa, in Perth since 2018. We are open late seven days, we run a team of around fifteen, and we are growing rapid.

Hours

This is a salaried role, not an hourly one. Retail butchery hours including weekends, and busy periods mean longer days. The salary is set with that in mind. A fixed 38 hours is not guaranteed, and if that is what you need, this is not always the right shop, and we would rather tell you now than in week three.
