About the role

LiTo is the flagship restaurant at Mondrian Gold Coast, a 208-room luxury hotel. The Restaurant Manager leads a full FOH team across breakfast and dinner service, owns the reservations experience end to end, and delivers financial performance the business can build on. This role reports to the Venue Manager and sits within the broader F&B; leadership team at Mondrian.

Key responsibilities

- Own the weekly roster

- Monitor labour cost % against revenue daily and act on variances before they compound

- Report on labour performance weekly and bring solutions, not just numbers

- Work within agreed wage budgets and flag pressure points before they become overruns

- Understand the award — know when penalty rates apply and roster accordingly

- Operate Point of Sale System (Micros Simphony preferred) confidently — taking orders, processing, reconciling end-of-day

- Ensure every team member is trained and operating POS correctly

- Oversee the LiTo reservations experience — from first enquiry to guest arrival

- Manage the SevenRooms platform (or equivalent) — ensuring accuracy, guest notes, and capacity optimisation





- Set the standard for every guest interaction — from reservation to farewell

About you

- Proven experience as a Restaurant Manager in a high-end or lifestyle hospitality venue

- Demonstrated track record of labour cost control and hitting financial targets

- Confident POS operator — Micros Simphony strongly preferred

- Experience with SevenRooms or equivalent reservations platform

- A genuine commitment to guest satisfaction — you take reviews personally

- Solid team leader — people want to work for you

- RSA certified (RMLV desirable); First Aid desirable

- Available across peak service periods including evenings and weekends
