J Panda Eatery is opening a new location at Elizabeth Quay in October **** and we are looking for an experienced Senior Sushi Chef / Kitchen Supervisor to join our team on a full-time basis. This role is primarily focused on sushi, sashimi and Japanese cuisine, with involvement in the hot food section and day-to-day kitchen supervision.
Key responsibilities
Prepare sushi, sashimi, nigiri, maki, hand rolls and other Japanese dishes.
Prepare and handle fresh fish and seafood to a high standard.
Assist with Japanese hot food including donburi, curry, udon and fried dishes.
Maintain consistent food quality, presentation and portion control.
Monitor food cost, stock levels and wastage.
Receive goods from suppliers and ensure correct receiving procedures are followed.
Maintain food safety, hygiene, storage and labelling standards.
Organise daily preparation and kitchen workflow.
Train and support junior kitchen and sushi staff.
Work closely with front-of-house staff and management.
What we are looking for
Minimum 2-3 years' experience in sushi, sashimi or Japanese cuisine.
Strong sushi-making skills are essential.
Experience in a Japanese hot food section is highly regarded.
Previous experience as a Supervisor, Senior Chef or Kitchen Supervisor is preferred.
Good knowledge of food safety and kitchen hygiene.
Strong organisation and time-management skills.




Ability to work efficiently in a busy environment.
Reliable, responsible and able to work independently.
Ability to train and guide other team members.
Not yet at supervisor level?
