Cook – PHO LE Melbourne Full-Time | $90,000–$100,000 + Superannuation PHO LE Melbourne is looking for an experienced and reliable Cook to join our growing kitchen team. Bringing more than 55 years of Saigon heritage to Melbourne, PHO LE is committed to serving authentic Vietnamese flavours with a strong focus on quality, consistency and traditional preparation methods. This is an excellent opportunity for an experienced Cook who is comfortable working in a fastpaced Vietnamese commercial kitchen and has strong skills in food preparation, cooking and kitchen organisation.

About the Role As a Cook at PHO LE, you will play an significant role in the day-to-day operation of the kitchen and in maintaining the quality and consistency of our food.

Your key responsibilities will include: Manage and supervise the daily operations of the kitchen. Coordinate food preparation and service to ensure meals are prepared efficiently and consistently. Organise kitchen workflow and allocate duties to kitchen staff according to service requirements. Monitor food quality, presentation, portion sizes, and service standards. Prepare large batches of pho broth, including handling beef bones, meat, spices, seasoning, and cooking processes. Monitor broth cooking times, temperatures, flavour consistency, and final yield. Prepare and cook various cuts of beef including brisket, fatty brisket, tendon, rare beef, and other pho toppings. Train staff in food preparation, cooking techniques, portion control, hygiene, and kitchen procedures. Allocate daily tasks and kitchen sections to staff.Monitor employee performance and provide guidance where necessary. Assist with preparing kitchen staff rosters according to operational requirements Ensure compliance with Australian food safety and hygiene requirements.



Monitor food storage temperatures and cooking temperatures. Ensure raw and cooked foods are stored and handled safely. Maintain high standards of personal hygiene and kitchen cleanliness.What We’re Looking For The successful candidate will ideally have:  Previous experience working in a fast-paced commercial kitchen, preferably in Vietnamese or Asian cuisine.  Experience preparing Vietnamese dishes, particularly PHO broth and beef-based dishes, highly regarded.  Strong knife skills and confidence handling meat, bones, vegetables and fresh ingredients.  Certificate III in Commercial Cookery or equivalent trade experience preferred.  Current Food Safety Supervisor Certificate preferred.  Good knowledge of food safety, hygiene and safe food-handling procedures.  Ability to work efficiently and maintain consistent standards during busy service periods.  Strong communication and teamwork skills.  A reliable attitude and strong work ethic.  Genuine passion for Vietnamese cuisine and quality food.  Availability to work evenings and weekends, including Saturdays and Sundays, as required.  Willingness to learn, develop and grow with the business.
