Head Chef — Remy's, Paddington
Remy's is a long-standing Paddington venue with the warmth and familiarity of a neighbourhood corner, now moving with intent into its next phase as an all-day bistro. Remy's has been part of Paddington's collective culture for more than 14 years.
We’ve been known for our laid-back character and simple but consistent cafe breakfasts & smash burgers - and we’re have just commenced a new chapter where we create more synergy between our AM & PM menus, injecting quality ingredients, skill & technique to create something worthy of expansion.
We are looking for a Head Chef to help lead Remy's next chapter as a proper all-day bistro with a sharper food, a stronger kitchen culture and the ability to expand into new markets with a reputation of consistently high quality from start to finish.
This is a chef-led role in the fullest sense and is not for a beginner lacking in people management & training, or someone looking for a step back in their career. We are looking for humble, hungry & skilled Chefs to help reshape the Paddington venue and build a team that can staff a new venue in the next 12-18 months.
We are looking for someone with deep practical skill, real curiosity and the appetite to lead well. Someone who can make a menu feel considered without making the restaurant feel precious; who understands how to present elevated comfort food that is commercial & culinary at the same time.
About the role
As Head Chef, you will lead the kitchen day to day and help define the food direction of Remy's as it develops into a serious all-day bistro.
Our senior managers become virtual shareholders with bonuses tracked directly to increased revenue & profitability. In return we seek someone who can demonstrate:
- High standards of team organisation, preparation, cooking, presentation and consistency.
- A kitchen culture built on calm leadership, respect, accountability and teaching.
- Practical service leadership: preparation, communication, pace, quality and clean handover between shifts.
- Sensible menu development that respects the venue, the guest and the realities of a working kitchen.
- Strong food safety, hygiene and compliance practices and standards
- Clear oversight of ordering, stock control, waste awareness & kitchen organisation
- Robust management experience when it comes to COGs & Wages
