Club Musgrave is seeking an experienced and capable Sous Chef to join our kitchen team and work closely alongside our Head Chef.
This is a hands-on role suited to an experienced Sous Chef, or a strong trade-qualified Chef who is ready to take the next step into a leadership position.
About the Role
As Sous Chef, you will work closely with the Head Chef to support the day-to-day operation of the kitchen across Bistro 4215, functions and Club events. You will play a key leadership role within the kitchen, helping maintain strong standards across food quality, service, organisation, food safety and team performance.
When the Head Chef is not present, you will be confident taking responsibility for kitchen operations and leading the team through service.
This is not a purely supervisory position. We are looking for someone who is comfortable being hands-on in the kitchen and working alongside the team.
Key Responsibilities
- Work closely with and support the Head Chef in the daily operation of the kitchen
- Take responsibility for kitchen operations when the Head Chef is unavailable
- Prepare, cook and present meals to a consistent standard
- Lead and direct a small kitchen team of approximately 3–4 staff during service
- Maintain efficient service during busy trading periods
- Assist with menu development, specials and new menu ideas
- Assist with function menus, preparation and larger Club events
- Support the Head Chef with ordering, stock control and stocktakes
- Monitor food costs, portion control and wastage
- Receive and check supplier deliveries
- Maintain food safety documentation and temperature records
- Ensure correct food rotation, storage and labelling procedures are followed
- Maintain high cleaning, hygiene and kitchen presentation standards
- Help train, support and develop junior kitchen staff
- Ensure kitchen procedures and Club standards are consistently followed
About You
To be successful in this role,
you will:
- Be a trade-qualified Chef with Certificate III in Commercial Cookery or equivalent
- Have previous Sous Chef experience, or be an experienced Chef ready to step into a leadership role
- Be confident leading and directing a kitchen team
- Have strong hands-on cooking and service experience
- Be organised and able to prioritise during busy periods
- Remain calm and professional under pressure
- Have strong communication skills
- Take ownership and be able to work without constant direction
- Work well alongside the Head Chef and wider team
- Have strong food safety and hygiene knowledge
- Be reliable, punctual and consistent
- Be willing to support and develop less experienced kitchen staff
- Have experience in a club, pub, hotel or high-volume kitchen environment — highly regarded

- Casual employment with approximately 38 hours per week available

About Club Musgrave
Club Musgrave is a community-focused bowls and social club located in Southport on the Gold Coast. Our venue includes Bistro 4215, bars, gaming, bowls and multiple function spaces, with a regular calendar of functions, entertainment and community events.
