Dirty Harry's Bar & Grill is searching for an experienced and energetic Full-Time Head Chef to lead the kitchen team in our Bowen Hills venue with a classic Aussie pub style menu.
We are also seeking an experienced line chef to assist with service, prep and cleaning.
We are an independent outfit with a small team so being laid back and working closely with others is a must. Services can range from quiet midday lunches to very high-volume periods when there are in-house functions or events at the RNA showgrounds and nearby music venues
Head Chef
The Head Chef position requires at least 5 years experience as a qualified Chef with at least 2 of those years being in a leadership position (Head Chef or Sous Chef). Pay structure will start from a Full-Time hourly position at level 5 according to the industry award but pay can be negotiated above this for the right person.
As a leader in the kitchen, you will also need to have a current food safety certificate for compliance with local council provisions.
Responsibilities of the role include:
- Leading the team and running the pass during service
- Organizing prep lists and cleaning outside of service
- Menu creation & seasonal specials
- Stock take & Ordering
- Keeping track of costs and margins
- Maintaining food safety standards
- Organizing rosters in consultation with the venue manager
- Tailored catering options for functions with specific dietary requests
Supporting Chef
This position requires a minimum of 2 years experience in kitchens. Qualifications are valuable but not necessarily required if you can demonstrate on the job learning and relevant skills. Pay will depend on qualifications and whether you are looking for casual or Full-Time work.
Responsibilities of the role include:
- Line service
- Prep work assigned by the Head Chef
- Daily, weekly & monthly cleaning jobs
- Assistance with catering for functions
