About the role

This is a hands-on leadership role. You'll be running the kitchen day-to-day alongside our Head Chef — driving service, holding the standard, and training and guiding the team around you. When the Head Chef is off, you'll take full responsibility for the kitchen and lead the team through service.

Fresh pasta is the heart of what we do, so that's where your focus will be, but you need to be a true all-rounder who moves confidently across every section. There's genuine responsibility here, and real input into specials and how the kitchen develops.

Key responsibilities
Run the kitchen day-to-day alongside the Head Chef, and lead it fully on his days off
Train, guide, and develop junior kitchen staff
Lead our fresh pasta section — making, cooking, plating
Hold the line on food quality, consistency, and kitchen standards
Contribute ideas and input on specials and menu development
Manage prep, delegation, and the pace of a busy summer service
Keep the kitchen clean, organised, and running to a high standard

About you




Solid experience in Italian cooking, with real fresh pasta skills
Either 2–3 years as a Sous Chef, or a strong CDP genuinely ready to step up
A leader — someone who can guide a team, not just cook on a section
Calm and organised under pressure
Reliable, respectful, and takes pride in the plate that goes out
