Job Description
The Panning & Confectionery Production Worker supports the preparation of premium, artisan macadamia-based confectionery products, including chocolate-coated nuts, glazed items, and hand-crafted specialty lines. This role involves operating panning equipment, tempering chocolate, finishing artisan products, and supporting retail and e-commerce fulfilment. Attention to craftsmanship, quality, and food safety is essential.

Key responsibilities
n
Artisan Panning & Confectionery Production:
n
Operate panning machines for applying chocolate, yogurt, or glaze coatings to macadamia kernels.
n
Prepare artisan batches including small-batch, hand-crafted, or limited-edition products.
n
Manually coat, dust, polish, and decorate nuts for specialty items (e.g., cocoa-dusted, hand-drizzled, candied varieties).
n
Monitor product appearance, texture, and taste to ensure a consistent, high-end finish.
n
Operate tempering equipment or perform manual tempering techniques to prepare couverture chocolate.
n
Ensure chocolate is tempered correctly for shine, snap, and shelf stability.
n
Apply tempered chocolate to nuts via panning, enrobing, or hand-coating methods.
n
Quality Assurance & Traceability:
n
Conduct in-process checks for coating quality, thickness, uniformity, and aesthetic appeal.
n
Maintain accurate batch and ingredient traceability records according to HACCP and GMP standards.
n
Follow strict allergen and cross-contact protocols, especially when changing coatings or flavours.
n
Assist in packaging finished artisan products for retail shelves, gift sets, or online orders.
n
Weigh, label, seal,
and code packaging to meet branding and compliance standards.
n
Prepare custom and seasonal product lines for promotional campaigns or direct-to-customer dispatch.
n
Coordinate with the fulfilment team to ensure accurate order picking, boxing, and presentation.
n
Thoroughly clean panning machines, tempering tools, moulds, and preparation areas between batches.
n
Follow food-grade cleaning practices, especially for allergen-sensitive or flavoured products.
n
Report any maintenance needs or equipment malfunctions to supervisors promptly.
n
Qualifications & Experience
n
Experience in food manufacturing or artisan confectionery preferred.
n
Skills in chocolate tempering, hand-coating, or boutique food presentation are highly regarded.
n
Familiarity with panning or enrobing equipment (training provided).
n
Working knowledge of HACCP, GMP, allergen management, and food safety protocols.
n
Passion for high-quality, hand-crafted food products.
n
Excellent attention to detail and product aesthetics.
n
Reliable, creative, and team-focused.
n
Ability to work cleanly and precisely in quick-paced, quality-driven environments.
n
Flexibility to assist across product lines and packaging duties.
n
Temperature-controlled confectionery room with chocolate, sugar, and nut exposure.
n
Physically active role requiring standing, manual handling, and repetitive tasks.
n
May involve use of fine tools, heated surfaces, rotating drums, and tempering units.
n
PPE (hairnets, gloves, aprons) required; allergen and hygiene practices strictly enforced.
n
May require flexible shifts, weekend work, or extended hours during seasonal or promotional periods.
