With a strong focus on Italian wines, complemented by standout selections from France and Australia, the cellar offers an exciting platform for a Restaurant Manager who is passionate about food, wine and elevated service.We are now seeking an experienced and ambitious Restaurant Manager to lead the front‐of‐house team and help shape the next chapter of Ormeggio at The Spit.This is a senior leadership opportunity for someone who thrives in a high‐performing fine‐dining environment, leads from the floor and is passionate about developing people, driving standards and creating memorable guest experiences.About the RoleReporting into the senior leadership team, you will take ownership of the day‐to‐day front‐of‐house operation while working closely with the kitchen, wine and wider management teams.You will be responsible for ensuring every service reflects the standards, warmth and attention to detail that Ormeggio is known for.Your responsibilities will include:Leading the daily operation of the restaurant and front‐of‐house teamDriving consistently high standards of service and guest experienceManaging,
mentoring and developing FOH team membersConducting pre‐service briefings covering menu updates, daily specials, VIP guests and special eventsManaging rosters, labour costs and wage performanceMonitoring operational and financial performance against budget expectationsCompleting daily operational and financial reportingWorking closely with the kitchen team to ensure seamless service deliverySupporting food, wine and service training across the FOH teamManaging staff performance, development and accountabilityMaintaining strong relationships with key external stakeholders, including d'Albora Marina and Mosman CouncilSupporting reservations, table management and overall guest flowContributing to the ongoing evolution and performance of the venueWhat We're Looking ForYou are an experienced hospitality leader who understands the detail, discipline and energy required to operate at a high level.Ideally, you will bring:Full Australian working rightsFluent spoken and written EnglishA current NSW RSA CertificatePrevious restaurant management or senior supervisory experienceIdeally 1–3 years' experience within fine dining, hatted restaurants or a comparable premium hospitality environmentA strong working knowledge of food and wineAn appreciation of Italian cuisine, wine and hospitalityExperience preparing daily operational and financial reportsStrong commercial awareness, including rostering, wage management and cost controlExcellent communication and leadership skillsThe ability to coach, motivate and performance‐manage a diverse teamConfidence leading busy,
high‐pressure servicesExcellent attention to detail and personal presentationAvailability to work a flexible hospitality roster including weekends and public holidaysFormal hospitality studies, including a Diploma of Hospitality or similar qualification, will be highly regarded.Italian language skills are welcomed but are not essential.Systems ExperiencePrevious experience with the following would be advantageous:SevenRooms or another restaurant reservation platformMobiPOS or another restaurant POS systemRestaurant reporting and labour management systemsWhy Join Ormeggio?
