Positions: Commis Chef / Chef de Partie / Senior Chef de Partie
Employment: Full-Time & Casual
Hourly Rate: $30–$40 per hour, depending on position, experience and skill level
About Monsieur Paul
A new culinary chapter by L’Entrecote Group is about to begin.
Inspired by Paul Bocuse and the traditions of French cuisine, Monsieur Paul will focus on quality produce, precise technique and authentic flavours.
Located in the heart of Double Bay, the restaurant will specialise in premium seafood, whole fish, oysters, sashimi-style seafood preparation, charcoal-grilled steaks and classic French cuisine.
We are now building our opening kitchen team and looking for passionate, reliable and skilled chefs who want to join us from the beginning and grow with the restaurant.
Positions Available
We are recruiting:
- Commis Chefs
- Chefs de Partie
- Senior Chefs de Partie
Experience or strong skills in one or more of the following areas will be highly regarded:
Seafood Preparation
Experience handling fresh seafood, including:
- Fish filleting and whole fish preparation
- Oyster shucking
- Seafood portioning and handling
- Seafood quality and storage
Wood or Charcoal Grill
At least 1 year of hands-on experience with wood-fired or charcoal grills, with good knowledge of fire management, temperature control and steak doneness.
Sashimi Preparation
Strong knife skills and experience with fish filleting, skinning, deboning, portioning and sashimi slicing.
French Cuisine
At least 3 years of experience in French cuisine or a French-influenced professional kitchen, with knowledge of traditional cooking techniques, sauces,
seafood or meat preparation.
Busy Restaurant Experience
At least 3 years of experience in a busy professional kitchen, with the ability to maintain speed, organisation, cleanliness and consistency under pressure.

We do not expect every chef to know everything from day one. A strong work ethic, good attitude and willingness to learn are what matter most.
