About the role
This is a genuine opportunity for a driven sous chef or senior chef de partie to step up into their first Head Chef position. You don't need prior Head Chef experience. What you need is robust experience in a brigade as a sous chef or senior chef de partie, real leadership aptitude and ambition, and a genuine passion for or fascination with Mexican and New Mexican food.
A purpose-built kitchen is designed specifically for Sancho Taqueria & Tequileria's menu and service style, with an established team ready to work with you. Full support is available from the owner-operator, operations manager and financial controller. A consulting Head Chef — one of Brisbane's most experienced chefs, with deep training in Mexican and New Mexican cuisine — is committed to training, mentoring and supporting you in the role.
Key responsibilities
- Lead the kitchen at SANCHO Taqueria & Tequileria, a small 70 seat venue
- Establish yourself with a strong brand & exciting cuisine which is on trend and showing no sign of disappearing any time soon!
- Work with an established brigade team
- Manage kitchen operations for a venue which trades all weekend but only 5 to 9 PM Monday to Thursday.

- Strong experience in a brigade as a sous chef or senior chef de partie in a larger venue

- Genuine passion for or fascination with Mexican and New Mexican food
