We are now seeking an experienced and ambitious Restaurant Manager to lead the front‐of‐house team and help shape the next chapter of Ormeggio at The Spit.
n
This is a senior leadership opportunity for someone who thrives in a high‐performing fine‐dining environment, leads from the floor and is passionate about developing people, driving standards and creating memorable guest experiences.

About the Role
n
Reporting into the senior leadership team, you will take ownership of the day‐to‐day front‐of‐house operation while working closely with the kitchen, wine and wider management teams.
n
You will be responsible for ensuring every service reflects the standards, warmth and attention to detail that Ormeggio is known for.
n
Your responsibilities will include:
n
n
- Leading the daily operation of the restaurant and front‐of‐house team
n
- Driving consistently high standards of service and guest experience
n
- Managing, mentoring and developing FOH team members
n
- Conducting pre‐service briefings covering menu updates, daily specials, VIP guests and special events
n
- Managing rosters, labour costs and wage performance
n
- Monitoring operational and financial performance against budget expectations
n
- Completing daily operational and financial reporting
n
- Working closely with the kitchen team to ensure seamless service delivery
n
- Supporting food, wine and service training across the FOH team
n
- Managing staff performance, development and accountability
n
- Maintaining robust relationships with key external stakeholders, including d'Albora Marina and Mosman Council
n
- Supporting reservations, table management and overall guest flow
n
- Contributing to the ongoing evolution and performance of the venue
n
n
What We're Looking For
n
You are an experienced hospitality leader who understands the detail, discipline and energy required to operate at a high level.
n
Ideally, you will bring:
n
n
- Full Australian working rights
n
- Fluent spoken and written English
n
- A current NSW RSA Certificate
n
- Previous restaurant management or senior supervisory experience
n
- Ideally 1–3 years' experience within fine dining, hatted restaurants or a comparable premium hospitality environment
n
- A strong working knowledge of food and wine
n
- An appreciation of Italian cuisine, wine and hospitality
n
- Experience preparing daily operational and financial reports
n
- Strong commercial awareness, including rostering, wage management and cost control
n
- Excellent communication and leadership skills
n
- The ability to coach, motivate and performance‐manage a diverse team
n
- Confidence leading busy, high‐pressure services
n
- Excellent attention to detail and personal presentation
n
- Availability to work a flexible hospitality roster including weekends and public holidays
n
n
Formal hospitality studies, including a Diploma of Hospitality or similar qualification, will be highly regarded.
n
Italian language skills are welcomed but are not essential.
n
Systems Experience
n
Previous experience with the following would be advantageous:
n
n
- SevenRooms or another restaurant reservation platform
n
- MobiPOS or another restaurant POS system
n
- Restaurant reporting and labour management systems
n
n
