JobScout Pty Ltd are working to assist our client, Jay Madee Pty Ltd, trading as Red Rooster Griffith, an established quick service restaurant operating under the Red Rooster network. The business serves the Griffith community and surrounding Riverina region across dine-in, takeaway, drive-through and delivery channels, and has built its reputation on consistent product quality, fast service and a well-run store.

Our client is seeking an experienced Retail Manager to take full operational responsibility for the Griffith store on a full-time, ongoing basis. This is a hands-on leadership role with genuine autonomy over stock, staffing, budgets and store performance, working within the standards and systems of the Red Rooster franchise network.

Responsibilities of our Retail Manager will include:

1. Determining the product mix, stock levels and service standards of the store, including chicken, meal and promotional product ranges, in line with Red Rooster franchise requirements and local customer demand in the Griffith trading area.
2. Formulating and implementing purchasing and marketing policies at store level, including participation in national campaigns, local area marketing initiatives and community sponsorships to grow sales and market share.
3. Setting prices for menu items and promotional bundles within franchisor pricing frameworks, and monitoring competitor pricing and offers within the local quick service market.
4. Promoting and advertising the store's products and services through in-store merchandising, drive-thru and digital menu boards, delivery aggregator platforms (Uber Eats, DoorDash, Menulog) and social media channels.
5. Maintaining and enforcing customer service standards across front counter, drive-thru and delivery channels, and investigating and resolving customer complaints, refunds and quality issues to protect brand reputation.
6. Maintaining records of stock levels, wastage and financial transactions, conducting regular stocktakes and reconciling daily takings, banking and point-of-sale reports.
7. Undertaking budgeting and financial management of the store,



including monitoring sales targets, cost of goods, labour costs and controllable expenses against the store profit and loss statement, and reporting performance to the franchisee/area manager.
8. Planning and managing inventory, including ordering fresh chicken, produce, dry goods and packaging from approved suppliers, managing cold-chain receiving procedures and minimising wastage through forecasting and stock rotation (FIFO).
9. Ensuring the store complies with occupational health and safety regulations, including safe work procedures for fryers, rotisserie equipment and hot oil handling, incident reporting, and maintenance of a safe working environment for staff and customers.
10. Ensuring compliance with food safety legislation and standards, including NSW Food Authority requirements, food safety supervisor obligations, HACCP-based food safety programs, temperature monitoring and cleaning schedules.
11. Selecting, training, rostering and supervising staff, including shift supervisors, cooks and customer service team members, and managing onboarding, performance, disciplinary matters and compliance with the applicable award and franchise labour standards.
12. Preparing staff rosters aligned to forecast trading patterns and labour budgets, and managing timekeeping, wage cost control and payroll records.
13. Overseeing the maintenance, cleanliness and presentation of the store premises and equipment, and coordinating repairs and preventative maintenance with approved contractors.
14. Ensuring operational compliance with franchise agreements, brand standards and audit requirements,



and implementing corrective actions arising from franchisor operational assessments and mystery shopper reports.
15. Analysing sales data and store performance metrics to identify trends, adjusting product availability and staffing, and implementing strategies to improve sales, speed of service and customer satisfaction scores.

To be successfully considered for the role, you:

·Hold an associate degree, Advanced Diploma or Diploma in retail, business, hospitality or a related field.

·Have a minimum of one year's experience working as a Retail Manager, or in an equivalent store or outlet management role.

·Have demonstrated experience managing a retail, quick service restaurant or hospitality outlet, including responsibility for staff, stock and store performance.

·Have proven experience rostering and supervising a team and managing labour costs to a budget.

·Have experience with stock control, ordering, stocktakes and supplier management.

·Are confident interpreting sales and cost reports and acting on the numbers.

·Have a sound working knowledge of food safety and work health and safety obligations.

·Have strong customer service skills and the ability to lead a team through busy trading periods.

·Are available to work a rotating roster including evenings, weekends and public holidays.

This is a full-time position of at least 38 hours per week.
