About the Position

The Skilled Meat Worker is a hands-on production role at the centre of the company's day-to-day processing operations, responsible for slaughtering, boning, slicing and trimming duties and for preparing product that meets exact customer specifications. The position calls for genuine knife skills, sound judgement about product quality and yield, and the physical stamina to maintain accuracy and pace across a full shift in a chilled processing environment. Because every carcass passing through the facility is handled by this role, the Skilled Meat Worker directly determines product quality, yield recovery, food safety compliance and the company's ability to meet customer orders on time,



making it one of the most important operational positions within Macintyre Pty Ltd.

Key Responsibilities

1. Carry out slaughtering, dressing and butchering duties in accordance with prescribed work instructions, animal welfare requirements and Australian meat industry safety and quality standards.
2. Break down carcasses into primal, sub-primal and portioned cuts using knives, saws and other cutting equipment to meet customer specifications and yield targets.
3. Perform boning, slicing, trimming and seaming tasks with precision, minimising product waste and maximising saleable yield.
4. Sharpen, maintain and safely handle knives, hooks, saws and associated processing equipment, reporting any faults or damage immediately.
5. Inspect meat products throughout processing for defects, contamination, disease indicators or other abnormalities, and report any issues to the supervisor without delay.
6. Assist with the packaging, vacuum sealing, weighing, labelling and palletising of finished product in readiness for chilling, storage and dispatch.
7. Maintain the cleanliness and sanitation of work areas, tools and equipment in compliance with HACCP, food safety and workplace health and safety requirements.
8. Follow correct product identification, traceability and record-keeping procedures at each stage of processing.
9.



Monitor consumable and packaging supplies and advise the supervisor when replenishment is required.
10. Work cooperatively with team members, supervisors and other departments to maintain production flow, meet daily throughput targets and uphold product quality.
11. Participate in ongoing training, toolbox talks and skills development sessions, and apply updated industry standards and work practices on the floor.

Requirements

1. Australian citizens and permanent residents are encouraged to apply.
2. Minimum AQF Certificate III in Meat Processing (or an equivalent recognised qualification).
3. A minimum of two to three years' demonstrated experience as a butcher, slaughterer, boner or smallgoods producer.
4. Prior experience in an abattoir, boning room or comparable meat processing environment is preferred.
5. Demonstrated competence and precision in the use of meat processing tools and machinery, including knives, saws and band saws, together with sound knife sharpening skills.
6. Sound working knowledge of hygiene, sanitation, HACCP and food safety requirements specific to meat processing, and of workplace health and safety obligations.
7. Physical capacity to stand for extended periods, lift heavy objects, work in chilled conditions and perform repetitive tasks throughout a full shift.
8. Robust attention to detail, with a consistent commitment to product quality, specification accuracy and yield performance.
9. Effective communication skills and a proven ability to work productively as part of a production team.
10. Reliability, punctuality and a willingness to work rostered shifts as required by production demands.
