Chotto Matte is a globally recognised Japanese–Peruvian restaurant group, with venues in London, Manchester, San Francisco, Toronto, Doha and Riyadh, and now launching in Sydney’s Bondi Beach.

Known for bold Nikkei cuisine, striking interiors, music, art and high-energy dining, Chotto Matte delivers a vibrant and premium restaurant experience.

We are now recruiting our opening kitchen team.

The Food

Our kitchen showcases Nikkei cuisine, combining Japanese techniques with bold Peruvian flavours.

The menu includes

- Sushi and raw dishes
- Robata-grilled dishes
- Nikkei small plates
- Ceviche

- Desserts and pastry inspired by Nikkei flavours

The Roles

Head Sushi Chef

Lead the sushi team, maintain quality standards, manage ordering and stock, control wastage and support training and menu development.

Chef de Partie

Run your assigned section, manage mise en place and service, maintain food quality and support junior chefs.

Demi Chef de Partie

Support the Chef de Partie with section preparation, service, stock control and junior team development.

Sushi Chef

Prepare and serve sushi and raw dishes while maintaining high standards of seafood quality, presentation and food safety.





Pastry Chef de Partie

Run the pastry section, prepare desserts and mise en place, maintain presentation standards and manage pastry stock.

Commis Chef

Assist with preparation, mise en place, service and general kitchen duties while developing your skills within the team.

About You

We are looking for chefs who have:
- Passion for food and hospitality
- Strong work ethic and reliability
- Good communication and teamwork
- Attention to detail
- Ability to work well during busy services
- Good food safety and hygiene knowledge
- Willingness to learn and develop

Experience in Japanese, Peruvian, Nikkei, premium casual or fine dining kitchens will be highly regarded. Applicants must have appropriate working rights in Australia.
