The Fullerton Hotel Sydney is an award-winning deluxe hotel set in the heart of Sydney's fashion and finance district. Part of the redevelopment of Sydney's historic General Post Office on Martin Place, this luxurious hotel is surrounded by Sydney's most exclusive designer shopping, best restaurants, theatres and nightlife.

The Place Kitchen supports the Hotel's signature all-day dining outlet which serves three main meal periods as well as 24/7 cuisine through in-room dining.

n

Our Main Kitchen services our event spaces including 2 ballrooms and our creative team in Pastry.

n

Please note we are only considering candidates with full working rights in Australia.

About the role: Full Time Chef De Partie (CDP)

n

In this role, you will use your culinary knowledge and exceptional skills to provide outstanding meals for our guests. You will already have knowledge of your specialized area of the kitchen and be confident to prepare meals across our menus.

n

Manage a designated kitchen section, ensuring dishes are prepared with consistency, quality, and presentation aligned to The Fullerton Hotel Sydney's luxury standards.

n

Lead and mentor junior chefs,



fostering teamwork and guiding them to excel within your section for seamless service.

n

Maintain hygiene, safety, and HACCP compliance, ensuring a clean, organised, and safe work environment.

n

Monitor stock levels, minimise waste, and manage resources efficiently to support cost-effective kitchen operations.

n

Collaborate on menu development, bringing creative ideas and ensuring dishes reflect the hotel's culinary excellence.

n

Execute additional requests or tasks assigned by the Executive Chef and Director of Culinary as needed.

n

Requirements:

n

Full working rights in Australia

n

Certificate IV in Commercial Cookery or above.

n

Strong communication skills in English.

n

In-depth understanding of HACCP principles.

n

Flexibility to work a 7-day rotating roster, including weekends, evenings, and public holidays.

n

Previous experience working

n

Ability to thrive in a dynamic environment with a strong commitment to delivering excellent guest experiences.

n
