Betel Boy is our Modern Thai restaurant and bar on the main street of Daylesford.

We serve Up-to-date Thai food built around good regional produce, with an open kitchen, a busy dining room and Boy-Bar, our private dining space, tucked away at the back.

We’re open Thursday to Monday, so Tuesday and Wednesday are your regular days off each week.

We’re looking for an Assistant Venue Manager with a strong bar background to lead the drinks side of the venue and support our Venue Manager through service.

What you’d be working with

• Boy-Bar — our speakeasy-style private dining space at the back of the venue.

• A cocktail list with house-made components and in-house infusions

• A wine list that includes local growers from Daylesford and the Macedon Ranges alongside international producers, plus local beer on tap

• An open kitchen with a major live-fire upgrade coming this year, adding woodfire, charcoal and Robata cooking to expand what the kitchen and menu can do.

Friday through Monday are our busiest services. We’re looking for someone who can keep the bar organised, direct the team and maintain drink quality when the venue is full.

What the role looks like

You’ll be the senior person on the bar and second-in-charge to the Venue Manager. Your main focus is the bar, with broader responsibility for helping the whole service run well.

• Bar leadership. Running the bar through service, setting up the team, allocating positions and keeping drinks moving without dropping the standard.

• Drinks program. Cocktail quality and consistency, prep and batching, stock and par levels, and beverage ordering.

• Team. Training and developing bartenders, supporting floor staff where needed,



and helping the Venue Manager set the tone for service.

• Venue support. Briefings, opening and close, cash handling and POS reconciliation, RSA and licensing compliance, and stepping into the wider service lead role when required.

What we’re looking for

• Strong bartending experience — you’re confident running a busy cocktail bar and keeping drinks consistent through a full service

• Leadership experience. You’ve directed a bar team or helped run service, and people are comfortable looking to you for decisions.

• Comfortable with wine and beer as well as spirits, and interested in the whole drinks program rather than cocktails alone

• Someone ready for more responsibility and interested in developing towards a Venue Manager role over time.

• Current RSA

• Current right to work in Australia

Formal qualifications aren’t required. Experience and ability matter more to us.

• $80,000 + 12% superannuation, paid weekly
