Our client is looking for an experienced Sous Chef to join their established Italian restaurant in Cowes, Phillip Island.
Operating under the same family for more than 50 years, the restaurant is known for authentic Italian cuisine, fresh pasta made daily, seasonal ingredients, and a busy beachfront dining environment.
This is a hands-on leadership position, working closely with the Head Chef to oversee the kitchen and maintain high standards throughout service.
About the Role The Sous Chef will play an important role in the day-to-day running of the kitchen, supporting the Head Chef and taking full responsibility for the kitchen on their days off.
Fresh pasta is at the heart of the restaurant, so strong pasta-making skills are essential. The successful candidate will also be confident across all kitchen sections and comfortable leading a team in a fast-paced environment.
Key Responsibilities

- Support the Head Chef with the daily operation of the kitchen
- Take full responsibility for the kitchen when the Head Chef is off
- Lead the fresh pasta section, including preparation, cooking and plating
- Train, mentor and develop junior kitchen staff
- Maintain high standards of food quality, consistency and presentation
- Assist with specials and menu development
- Manage preparation,



delegation and service during busy periods
- Ensure the kitchen remains clean, organised and compliant with food safety standards

About You
- Proven experience in Italian cuisine
- Strong and genuine fresh pasta-making skills
- 2–3 years' experience as a Sous Chef, or a strong Chef de Partie ready to step up
- Confident leadership and team management skills
- Ability to remain calm and organised under pressure
- Reliable, professional and passionate about quality food
- Strong work ethic and attention to detail
