Located within Crown Sydney, the Italian Dining Precinct brings together a'Mare, Pizza'Mare and Vista'Mare—three distinct venues celebrating authentic Italian cuisine and hospitality under the direction of acclaimed chef Alessandro Pavoni.
n
From award-winning fine dining and premium wine service to vibrant all-day dining and waterfront aperitivo, our precinct offers guests a truly immersive Italian experience. We are seeking an experienced Section Waiter / Sommelier to join our front-of-house team, working across the precinct to deliver exceptional food, wine and beverage service.

Key Responsibilities
n
n
- Independently manage a designated section during lunch and dinner service, ensuring seamless execution from guest arrival through to departure.
n
- Deliver professional food and beverage service in accordance with fine dining standards.
n
- Provide knowledgeable recommendations on food, wine and beverage pairings, with particular emphasis on Italian wines and regional cuisine.
n
- Present, open, decant and serve wines using recognised fine dining service techniques.
n
- Explain menu items, seasonal ingredients and daily specials with confidence and accuracy.
n
- Assist in maintaining and developing wine service standards, cellar organisation and stock rotation.
n
- Ensure tables, service stations and dining areas are maintained to impeccable presentation standards.
n
- Work collaboratively with chefs, sommeliers, bartenders and management to ensure smooth service and guest satisfaction.
n
- Handle guest enquiries, special requests and service recovery professionally.
n
- Maintain compliance with NSW RSA legislation, food safety requirements and Crown Sydney operating standards.
n
- Contribute to ongoing training and mentoring of junior front-of-house team members.
n
- Full Australian working rights.
n
- Current NSW Responsible Service of Alcohol (RSA) Certificate.
n
- 1-3 yearsexperience working in premium dining or fine dining restaurants.
n
- Hospitality Diploma or equivalent completed studies
n
- Demonstrated knowledge of classical food and wine service.
n
- Sound understanding of Italian wines, wine regions and food pairing principles.
n
- Experience serving premium wines, including decanting and table-side presentation.
n
- Excellent communication and interpersonal skills with fluent spoken and written English.
n
- Exceptional grooming, professionalism and attention to detail.
n
- Ability to perform efficiently in a high-volume, fast-paced fine dining environment.
n
- Must be able to pass a Crown police compliance check
n
n
Highly Desirable
n
n
- WSET Level 2 or higher (or equivalent wine qualification).
n
- Previous experience working within an Italian restaurant.
n
- Knowledge of regional Italian cuisine and traditional service styles.
n
- Experience with SevenRooms, Micros or similar POS and reservation systems.
n
- Availability to work evenings, weekends and public holidays.
n
- Italian language skills a bonus!
