- Preparing and monitoring operating budgets, tracking revenue and expenditure against forecast, and reporting on trading performance to the owners.
- Selecting, training, rostering and supervising front office, housekeeping, maintenance and food and beverage staff across both sites, and managing performance, leave and payroll input.
- Monitoring quality at all stages of the preparation and presentation of food and services, and ensuring the properties comply with health, safety, food safety, liquor licensing, fire and building regulations, and that all areas are clean, functional and of suitable appearance.
- Coordinating property maintenance, repairs, cleaning schedules, room inspections and refurbishment works, and liaising with contractors and building management.
- Maintaining and updating the property management, booking and point-of-sale systems, and preparing periodic operational and compliance reporting.
- Implementing security, key control, cash handling and emergency procedures, and managing incident reporting across both sites.
