Assistant Manager – Conservatory Restaurant

Set within the beautifully restored Treasury Building of 1851, the hotel features 509 guest rooms, including 28 luxury suites, a world-class Club InterContinental and distinctive dining venues delivering exceptional luxury experiences.

At the heart of our morning guest experience is Conservatory Restaurant, our signature breakfast destination.

And breakfast at InterContinental Sydney is anything but ordinary.

During peak periods, Conservatory can welcome up to 600 guests in just four hours, making it one of the hotel's largest and most significant daily guest touchpoints. For many of our guests, breakfast sets the tone for their day and can define how they remember their stay.

We are looking for an experienced and ambitious Assistant Manager to join our Conservatory leadership team and help us deliver an exceptional experience, every morning.

Your Day to Day – Inspire Incredible

Reporting to the Director of Food & Beverage, you will be part of the existing leadership team responsible for a high-volume, fast-paced luxury restaurant operation and a talented service team of approximately 25 colleagues. This is an outstanding opportunity for an emerging F&B; leader ready to take the next step in their career. You will gain significant exposure to high-volume luxury operations, people leadership, guest experience and operational performance, while making a visible impact on one of the most important experiences of our guests' stay.

You will

- Lead and oversee daily Conservatory operations,



coordinating a fast-paced service while ensuring every guest receives a warm, seamless and personalised experience.
- Lead, coach and develop a team of approximately 25 restaurant colleagues, creating a culture of accountability, engagement and exceptional service.
- Play an active role in recruitment, onboarding, training and development, helping us build the next generation of F&B; leaders.
- Champion our Forbes-inspired service excellence, ensuring our team anticipates guest needs and creates memorable moments throughout the breakfast experience.
- Maintain a strong presence on the floor, engaging with guests, supporting your team and responding quickly and confidently when things don't go to plan.
- Work closely with our Culinary team and other hotel departments to ensure a seamless experience for our guests.
- Maintain a strong focus on quality, presentation, service standards and operational efficiency within a high-volume environment.
- Use guest feedback and hotel performance measures to identify opportunities to continually improve the Conservatory experience.

What We Need From You We're interested in your leadership capability and passion for hospitality – you don't necessarily need to come from a breakfast restaurant.

- 1+ years' experience in a supervisory or leadership role within a high-volume hotel, restaurant, café or premium hospitality environment.
- A genuine passion for service excellence and creating memorable guest experiences.
- Confidence leading,



coaching and motivating a diverse team in a fast-paced operation.
- A hands-on leadership style – you're someone who enjoys being on the floor, supporting the team and engaging with guests.
- Strong interpersonal, organisational and communication skills.
- The ability to remain calm, organised and guest-focused during high-volume service periods.
- NSW RSA certification.
- Flexibility to work weekends and public holidays.
- Availability for starts from 6:00am starts is essential.
- Full Australian working rights with no restrictions. Sponsorship is not available for this role.
