We are a vertically integrated seafood business, with our own fishing vessels, seafood processing facility and hospitality venues. This gives our chefs a unique connection to the product; from the moment it is caught on our boats, through processing and preparation at our seafood facility, to its final presentation.

As Executive Chef, you will have the opportunity to influence the culinary direction of our a la carte kitchens while working within a business that has a long-standing reputation, strong local connections and a genuine commitment to Tasmanian seafood.

About the role

As Executive Chef, you will take overall responsibility for the culinary performance of both kitchens. Working closely with the Head Chefs and senior leadership team to deliver an exceptional guest experience while achieving strong commercial and operational results.

A key part of the role will be your ability to work confidently with seafood. Demonstrating your understanding of seasonality and species characteristics. Together with advanced knowledge of preparation and cooking techniques,



you will create outstanding contemporary seafood offerings reflecting the difference in our venues alongside the quality and provenance of the product.

You will be responsible for:

- Leading the overall culinary direction and food offering of Mures A la Carte venues.
- Developing menus that showcase premium Australian seafood and reflect seasonality, quality and availability
- Bringing strong knowledge of seafood species, cuts, preparation, handling, storage and cooking techniques
- Working closely with our seafood supply and purchasing teams to maximise product quality, utilisation and value
- Maintaining exceptional standards of food quality, presentation, consistency and portion control
- Managing food costs, wastage and purchasing against agreed targets
- Managing kitchen labour costs, productivity and rostering to meet business requirements against agreed targets.
- Developing and maintaining kitchen systems, procedures and standards
- Building a positive, accountable and high-performing kitchen culture
- Ensuring compliance with food safety, HACCP, workplace health and safety and legislative requirements
- Monitoring kitchen performance and implementing continuous improvement initiatives
- Supporting the ongoing development of Mures' reputation as a leading Tasmanian seafood destination

What we're looking for We are seeking an established senior chef who can demonstrate:

Seafood expertise





- Extensive knowledge and experience working with premium seafood, Cold Water species especially.
- Excellent seafood preparation, butchery and cooking skills
- A genuine passion for Australian seafood and contemporary seafood cuisine

Leadership

- Proven experience leading a high-volume, quality-focused kitchen
- Strong people leadership and team development skills
- The ability to set clear expectations and maintain high standards
- A calm, organised and solutions-focused approach, particularly during busy service

Commercial capability

- Strong understanding of food cost, gross profit, labour cost and kitchen KPIs
- Experience with menu costing, menu engineering and product utilisation
- Strong purchasing, stock control and wastage management skills
- The ability to balance culinary creativity with commercial outcomes

Operational excellence

- Exceptional attention to detail and consistency
- Strong knowledge of food safety and kitchen compliance
- Excellent organisation and planning skills
- Ability to manage competing priorities in a fast-paced environment
- A commitment to continuous improvement
