About the role

Garrison Restaurant is seeking an experienced and passionate Head Chef to lead our kitchen team and maintain the highest standards of food quality, consistency, and service.

Key responsibilities

- Lead, mentor, and develop the kitchen team, fostering a positive and high-performance culture.
- Oversee all daily kitchen operations, ensuring smooth and efficient service during lunch, dinner, and special events.
- Design, develop, and update seasonal menus that align with the restaurant's vision and customer expectations.
- Maintain exceptional food quality, presentation, consistency, and portion control across all menu items.
- Manage food costs, labour costs, and kitchen budgets to achieve financial targets.
- Source, negotiate, and maintain relationships with suppliers to ensure quality ingredients and cost-effective purchasing.
- Monitor inventory levels, stock rotation, ordering, and waste management procedures.
- Ensure compliance with all food safety, hygiene, and workplace health and safety regulations.
- Develop and implement kitchen systems, recipes, and standard operating procedures.
- Recruit, train, schedule,



and performance-manage kitchen staff.

About you

- Proven experience as a Head Chef or Senior Sous Chef in a high-volume restaurant.
- Strong leadership and team management skills.
- Excellent knowledge of modern Australian cuisine and current food trends.
- Demonstrated ability to manage food and labor costs effectively.
- Sound understanding of food safety and HACCP principles.
- Robust organizational, communication, and problem-solving abilities.
- Ability to perform under pressure while maintaining exceptional standards.
