Restaurant Manager – Riverside Restaurant

We are seeking an experienced Restaurant Manager to lead the Riverside Restaurant at Mercure Rockhampton. This is a hands-on leadership role suited to someone who thrives on the floor, leads from the front, and is passionate about delivering memorable dining experiences while driving strong commercial performance.

About the Role

Reporting to the Food & Beverage Manager / Hotel Manager, you will be responsible for the day-to-day operation of the restaurant, leading the team through service, maintaining high standards, and ensuring a welcoming, professional workplace for guests.

You will work closely with the kitchen, events, and hotel teams to deliver seamless service across breakfast, lunch, dinner, and functions.

Key Responsibilities
Lead daily restaurant operations and service delivery
Create outstanding guest experiences and manage service recovery
Recruit, train, roster, and supervise restaurant team members
Provide hands-on leadership during busy service periods
Manage labour costs, rosters, and productivity within budget
Monitor food & beverage costs, stock control, and wastage
Drive revenue through upselling,



promotions, and service excellence
Ensure compliance with food safety, RSA, WHS, and hotel standards
Maintain presentation, cleanliness, and ambience at all times
Collaborate with the Head Chef and hotel departments to support events and group bookings

About You
Proven experience as a Restaurant Manager or Supervisor in a hotel or high-volume venue
Strong leadership skills with a hands-on, service-focused approach
Excellent communication and interpersonal skills
Sound understanding of rosters, labour control, and cost management
Ability to work under pressure and manage competing priorities
Passion for hospitality, food, wine, and guest service
Flexible availability including weekends and public holidays
Current RSA and Food Safety Certificates
