About Baillie Hill & the Role

Baillie Hill is an established hospitality and community precinct in East Victoria Park, bringing together restaurants, bars, event spaces, gardens and unique hospitality experiences across one destination.

We’re looking for an experienced and highly organised Bar Manager to oversee beverage operations across two venues and three bars, with a fourth bar planned for the summer period.

This is a hands‑on leadership role for someone who can bring structure, consistency and strong commercial management across multiple bar operations, while continuing to develop and improve our overall beverage offering.

Working closely with the Operations Manager and Venue Managers, you’ll take ownership of bar systems, stock control, beverage costs, menu development, team training and the overall standard and performance of our bars.

With bars operating seven days a week across breakfast, all‑day and evening trade, this is a varied role suited to someone who enjoys a fast‑paced hospitality environment and takes pride in running well‑organised, high‑performing bars.

What You’ll Be Doing

Lead beverage operations across two venues and three bars, with scope to support the fourth bar as it comes online

Manage stock ordering, receivals, storage and inventory control

Monitor and manage COGS, margins and wastage to achieve strong commercial outcomes

Manage POS systems, beverage menus, pricing and product accuracy

Develop and maintain cocktail and beverage menus, ensuring quality and consistency





Implement and maintain efficient bar systems, workflows and service standards

Lead, train and develop bar teams across product knowledge, drink quality, speed and service

Work closely with Duty Managers and venue teams to maintain smooth day‑to‑day operations

Ensure bars are organised, well stocked, service‑ready and maintained to a high standard

Identify opportunities to improve the beverage offering, bar operations and guest experience

Ensure compliance with RSA, WHS and internal procedures

What You’ll Bring

2+ years’ experience in a Bar Manager or senior bar management role

Solid cocktail and beverage knowledge

Proven experience in stock control, ordering and inventory management

Strong understanding of COGS, margins and beverage cost control

Experience with POS systems and beverage menu management

Strong organisational skills and exceptional attention to detail

Experience leading, training and developing bar teams

Ability to implement systems and maintain consistency across multiple bars

Commercially minded, solutions‑focused and confident taking ownership

A hands‑on approach and willingness to work alongside the team during service

What We Offer

$80,000 – $90,000 + superannuation, based on experience
