The Rasoi Mt Eliza is seeking an experienced and enthusiastic Chef to lead kitchen operations in our busy and well-established restaurant.
Located in Mt Eliza on the Mornington Peninsula, we are recognised for serving authentic Indian cuisine prepared using traditional cooking techniques and fresh, high-quality ingredients.
Operating seven days a week, The Rasoi Mt Eliza offers both dine-in and takeaway services, catering to a diverse mix of local residents and visitors.
Our menu showcases a wide range of rich and flavourful Indian dishes, and we take pride in delivering consistency, quality, and warm customer service in a fast-paced yet welcoming environment.
This is an excellent opportunity for a qualified and passionate culinary professional with proven experience in Indian cuisine and strong kitchen leadership skills to join a dedicated team and contribute to the ongoing success of a well-established hospitality venue.
Key Responsibilities:
•Plan and organise the preparation and cooking of a diverse range of authentic Indian dishes, including curries, tandoori items, breads, rice dishes and vegetarian specialties, in accordance with established recipes and The Rasoi Mt Eliza's menu standards.
•Organise daily food preparation and coordinate kitchen activities to ensure efficient workflow and timely service across dine-in and takeaway operations.
•Prepare, season and cook food using appropriate culinary techniques, including tandoor cooking, grilling, frying, simmering and baking.
•Prepare and process ingredients by cleaning, cutting, portioning, marinating and seasoning food products in preparation for cooking and service.
•Monitor cooking processes and make appropriate adjustments to cooking methods, temperatures and seasoning to achieve the required quality, taste and presentation.
•Monitor the quality of food throughout preparation and service, ensuring consistency in taste, texture, portion sizes and presentation before dishes are served.
•Discuss food preparation requirements, kitchen issues and service requirements with management and other kitchen staff to ensure smooth and efficient kitchen operations.
•Coordinate with kitchen staff to ensure food is prepared and served within required timeframes, particularly during busy dine-in and takeaway service periods.
•Apply and demonstrate appropriate food preparation and cooking techniques to other kitchen staff where required to maintain consistent preparation and quality standards.
•Maintain high standards of food hygiene, sanitation and workplace cleanliness and ensure food is handled, prepared and stored in accordance with established food safety procedures.
•Inspect, receive and store food supplies appropriately, ensuring ingredients are fresh, suitably stored and available for daily kitchen operations.
•Monitor stock levels and preparation requirements, assist with ordering ingredients where required,
and minimise food wastage through appropriate storage and portion control.
•Maintain kitchen equipment and work areas in a clean, safe and serviceable condition and follow appropriate procedures for the safe use of commercial cooking equipment.
•Work collaboratively with front-of-house and kitchen staff to coordinate food preparation, address dietary requirements or reasonable customer requests, and ensure timely and productive service.
•Identify and address routine kitchen and food preparation issues, adjust preparation processes where necessary, and contribute to maintaining established recipes, food quality standards and efficient kitchen procedures.
To be successful in this role, it is essential you have:
•Hold a Certificate IV in Commercial Cookery or an equivalent recognised qualification.
•Possess a minimum of two years' experience as a Chef in a busy, professional kitchen, preferably within reputable or well-established dining venues.
•Demonstrate solid leadership and supervisory skills, with the ability to train, motivate, and effectively manage kitchen staff.
•Have in-depth knowledge of Indian cuisine, including spices, ingredients, regional flavours, and traditional cooking techniques, in line with The Rasoi Mt Eliza's standards.
•Ability to perform efficiently in a fast-paced, high-pressure setting while maintaining consistency and quality.
•Exhibit solid attention to detail, creativity, and a genuine passion for food preparation and presentation.
