About the Role

Cafe 63 Underwood is seeking a qualified and experienced Cook to join our kitchen team on a full-time basis. This is a senior Cook position within the kitchen team,

with other cooks and kitchen support staff working under the position holder's day-to-

day direction and coordination.

The successful candidate will be responsible not only for hands-on food preparation and cooking but also for coordinating the daily activities of other kitchen team members to ensure meals are prepared efficiently, consistently and in accordance with the cafe's quality, hygiene and food safety standards.

Key Duties and Responsibilities

- Prepare and cook a variety of dishes in accordance with established recipes, menus,

portion requirements and quality standards.
- Coordinate and oversee the day-to-day food preparation and cooking activities of other cooks and kitchen team members.
- Allocate routine preparation and cooking tasks to other kitchen staff and provide practical guidance where required.
- Monitor the work of kitchen team members to ensure food is prepared correctly,

efficiently and within required service times.
- Prepare ingredients by washing, cutting, measuring, portioning, seasoning and undertaking other required food preparation.
- Cook food using appropriate commercial cooking methods, including grilling, frying,

baking and roasting.
- Monitor the quality of ingredients and finished dishes to maintain consistent taste,





portion size and presentation.
- Check food throughout preparation and cooking to ensure correct temperatures,

cooking times and quality standards are maintained.
- Coordinate cooking activities during busy service periods to ensure customer orders are completed accurately and on time.
- Provide guidance to other cooks and kitchen staff regarding preparation methods,

portioning, presentation, food handling and kitchen procedures.• Assist with the induction and practical training of new kitchen team members where required.
- Monitor stock levels and coordinate the appropriate use and storage of ingredients and kitchen supplies.
- Receive and inspect food deliveries and ensure ingredients are stored correctly.
- Maintain appropriate stock rotation, food storage and temperature-control procedures.
- Assist with accommodating dietary requirements and special customer requests.
- Ensure cooking stations, utensils, equipment and kitchen work areas are maintained in a clean and organised condition.
- Ensure kitchen team members follow appropriate food safety, hygiene and workplace health and safety procedures.
- Minimise food wastage through appropriate preparation, portion control, stock rotation and storage practices.




- Work collaboratively with management to support the productive day-to-day operation of the kitchen.

Essential Requirements

Applicants must have

- A relevant qualification in Commercial Cookery.
- A minimum of 1 year of relevant experience working as a Cook in a commercial kitchen.
- Strong practical food preparation and commercial cooking skills.
- Ability to coordinate and provide day-to-day direction to other cooks and kitchen team members.
- Sound knowledge of food safety, hygiene and safe food-handling requirements.
- Ability to maintain consistent food quality, portioning and presentation.
- Good organisational, communication and time-management skills.
- Ability to work efficiently and coordinate kitchen activities during busy service periods.
- Ability to work effectively as part of a team while providing guidance to other kitchen staff.
- Availability to work a flexible roster, including weekends and public holidays where required.
